450g Tof u (water packed)
3 medium-sized tomatoes
1 Large red onion
4 cloves of garlic
2 Tbs Vegetable oil
1 Tbs Ginger
1 Tbs Corriander powder
1 Tbs Tumeric
2 Tbs Lemon or baobab
¼ cup Freshly chopped spring onions
¼ tsp Salt
- Chop the tomatoes and onions. Cook in pot without oil, use a little water till tender and cooked and mashy.
- Cut the tofu into cubes, place in a separate non stick pan with the oil stir frequently for about 5 minutes to allow to firm up and brown.
3.Put all the spices into a container and add 50 ml of water and mix. Pour onto the tofu. Add the tomatoes and onion paste and stir.
- Add the spring onion.
- Serve and enjoy!
