Ugali Reloaded Bites

Ingredients

2 ½ cups Whole meal maize flour

¾cup Whole wheat flour

½ cup Oats

2½ tbsp Dried whole thyme

3 tbsp Baobab powder

¼ tsp Salt

1 tsp Dried whole oregano

¼ cup Vegetable cooking oil

1/3 cup Sugar(replace with jaggery)

2 cups Water

Preparation

  1. Preheat the oven at 175℃.Grease a flat baking sheet using a little vegetable oil and

dust with wheat flour.

  1. In a mixing bowl, sift the whole maize meal flour,the whole wheat flour and baobab powder.Add the oats, thyme, oregano, salt, and sugar or jaggery. Mix with a flat wooden spoon.
  2. Add the oil and water. Mix to a wet dough consistency. Using an ice cream scoop,

scoop 16 portion onto the baking sheet and flatten a little where necessary.

  1. Put in the middle shelf of the oven and bake for 20-25 minutes or until the back of

the cookie is golden brown.

  1. Serve warm or cold.

Baobab

Ingredient of the week

Baobab is what is commonly know in Swahili as ‘mabuyu’. If you grew up in the city you may have eaten these snack as a young child on your way from school. Baobab has an intense flavour of sourness that you need when varying your food item flavour in the kitchen.

struggles with gluten intolerance or even diabetes. I have used it many times in varying the flavour of juices, soups and stews in my kitchen. It is a must have in the home. It is a sure ingredient that should never miss in your shopping basket.
